Fresh albacore pieces
Olive oil for the pan
Assorted fresh citrus, juiced (can be a combination of orange, lemon, lime, or tangerine)
Preparation:
Put the albacore pieces in the juice mixture for about 15-20 minutes. This cooks it through, ceviche style. Then remove from juice and sear the tuna in a hot pan or on a grill for just a few minutes on each side. Finish with a little salt and pepper to taste.
