1 med onion, diced
3 garlic cloves, crushed and diced
2 oz bacon or prosciutto, julienne sliced
1 egg yolk
¼ cup cream
¼ cup parmesan cheese
3-5 pieces uni
½ pound pasta, linguini or spaghetti
Fresh parsley
Start cooking pasta. While pasta is cooking, start on the sauce. Reserve ¼ cup cooking liquid to thin sauce, if needed.
Cook bacon and remove fat.
Add onion and sauté 5 min till soft.
Add garlic and sauté 2 min.
Pour in cream and bring to boil.
Reduce heat and whisk in half of the parmesan cheese.
Whisk in uni and egg yolk.
Salt and pepper to taste.
Fold with pasta.
Serve with the rest of the parmesan and fresh parsley.
