Smoked Carmel Canyon Black Cod Rillettes

1 package of Smoked “Carmel Canyon” Black Cod (1/4 pound)
1 cup crème fraiche or sour cream
¼ cup cornichons
¼  cup green onion
2 Tablespoons minced parsley
Salt and Pepper to taste


Chop or fork fish into a bowl, add remaining ingredients, and fold together.

Can be blended into a pâté, or lightly mixed chunky style, which is our preference.


Serve as a dip or spread on your favorite cracker or toast points.
