¼ lb. package of Real Good Fish Smoked El Niño Bonito
Local, seasonal, fresh greens for your preferred salad
Honey Mustard Dressing
For the dressing, mix in a bowl:
1 clove garlic, finely minced
1 tablespoon rice wine vinegar
1½ teaspoons whole grain Dijon mustard
½ teaspoon honey or agave nectar
Slowly whisk in ⅓ cup olive oil till smooth
Salt and pepper to taste
1) Build a base salad of greens of your choice (romaine and red leaf lettuce with late harvest cherry tomatoes and radishes are used in the photo)
2) Cut smoked fish into ¼ to ½-inch slices
3) Place on top of salad and drizzle with dressing
4) Garnish with chives and black sesame seeds
Pair with a semi-dry white wine such as a Riesling. This could also make a great wrapped salad for a lunch on the go.
