2-4 small sand dab fillets
2 tablespoons unsalted butter
1 tablespoon olive oil
Ground pepper to taste
Hot garlic herb butter
Salt to taste
1. In a sauté pan large enough to hold the fish in one flat layer, melt the butter with the olive oil over moderately high heat. When bubbles have subsided, add the sand dabs.
2. Season with salt and butter. Cook until browned and firm to the touch, 2-3 minutes per side.
3. Remove to a serving platter and dot with hot garlic herb butter to taste.
